As you know I started eating vegan exactly two weeks ago! I must say, I did got so many questions about why I am changing my lifestyle, if it’s really beneficial for the planet and most of all: ” What are you eating now if you can’t eat meat or fish?” Between you and me, I didn’t know what to eat either, because I was so used to my current lifestyle! I used to consume meat and other animal based products on a daily basis. I spent a lot of time searching for information on the internet and I want to save you from that. That’s why I decided to share a vegan recipe with you guys every once a week! This week’s recipe is: Vegan couscous salad!

So, there I was, standing in the kitchen with a promise to myself to be vegan from now on and I honestly had no clue or whatsoever how I was going to pull this one off. Motivated to the fullest, I wanted to keep my promise so I went to the supermarket and bought literally every kind of vegetables, fruits and nuts that I could find. I still had no idea what to make, so I just got some vegetables that looked cute together, cut them into little pieces and continued following the steps to make a great salad: homemade vegan couscous! I was happily surprised about that is tasted amazing! And the best of all: It’s very simple to make!

Ingredients for 2 persons:

  • 100 gr couscous
  • 1 zucchini
  • 2 tomatoes
  • 2 green onions
  • 1 onion
  • 3 garlic cloves
  • 1 carrot
  • 1 can kidney beans
  • 1 can chickpeas
  • 1 can tomato paste
  • 15 almonds
  • some vegan feta if you like!
  • salt
  • pepper
  • 1 red pepper
  • a few leaves of basil

Now, of course you can choose your own ingredients for the vegan couscous salad if you don’t like one of the vegetables I mentioned! First of all you have to cut every single vegetable and bake them until they’re soft. When your vegetables are ready, add the garlic and the onion together with the tomato paste and your herbs. Last, add the leaves of basil and let this steam for about 15 minutes. In the meantime you can add about 500 ml water to the couscous in a little bowl and let the water soak into the pasta! After the time has passed, mix everything together with the couscous and decorate it with some feta and almonds! FINALLY. You can eat!
