- 250 grams of dry biscuits
- 100 grams of butter
- 80 grams of sugar
- 250 grams of mascarpone
- 200 ml of whipping cream
- 1 vanillin sachet
- Jam and fruit

To prepare the cold cake, first you prepare the base that will have to harden in the refrigerator. Chop the biscuits in a mixer until they are powdered. In a bowl, add them to the melted butter and a spoonful of sugar and mix (better with your hands) until they are amalgamated. Then pour them in a round hinge mold or directly in the serving tray if you have the mold for "semifreddo". Compact, level and refrigerate for at least half an hour. Meanwhile you prepare the mascarpone cream: whip the cream and then add the mascarpone one spoon at a time and gently mix with a wooden spoon, then add the vanillin. Now pour it over the base and place in the fridge. Before serving, decorate with jam and fruit to your liking (I personally love strawberries).


- 250 ml of milk
- 200 grams of Flour type 00
- 65 grams of Sugar
- 1 Egg
- 1 teaspoon of baking powder for cakes

Put the whole egg in a bowl with the sugar and beat them with a fork. Add the milk and continue to beat. Gradually add the sifted flour and baking powder and continue to stir so that no lumps form until you get a smooth and homogeneous batter. Heat a non-stick pan and when it is hot put a ladle of pancake mixture to cook and cook for about 4 minutes, until you see that bubbles will form on it then turn the pancakes and cook them on the other side for others 3 or 4 minutes. Remove the pancakes from the pan and at this point you can spread them with maple syrup, Nutella, Honey, jam or simply decorate them with fruit.

Crêpes (without milk)

Crêpes without milk are a very light version of the classic crêpes.
- 3 eggs
- 180 grams of water
- 1 tablespoon of seed oil
- 180 grams of flour
- 80 grams of sugar

In a bowl, mix the eggs with the sugar. Add the well sifted flour. Stretch with water. Mix well to obtain a liquid batter without lumps. Heat a non-stick pan with a little bit of oil and then cook the crêpes by pouring a ladle of dough at a time. Move the pan to distribute the liquid evenly. When it starts to cook on the edges, turn the crêpes and cook it a few minutes on each side. Spread the jam or Nutella on the crêpes still warm and rolled it up on themselves. Serve with a little of icing sugar.
