Breakfast is one of my favourite meals of the day. Followed by lunch and dinner. And, along with the favouritism for the mean, there's also a couple of recipes that are my favourite.

1. CHOCOLATE PANCAKES

INGRIDIENTS

for pancakes
1 1/3 cups (185g) all-purpose flour
1/4 cup (25g) cocoa powder (I use Dutch-processed)
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/3 cup (65g) granulated sugar
1 cup (240 ml) whole milk
3 tablespoons canola or vegetable oil (or 45g melted butter)
1 teaspoon pure vanilla extract
1/2 cup (85g) chocolate chips or chunks
butter or oil , for cooking

DIRECTIONS

In a large bowl, sift together flour, cocoa powder, baking powder, and salt (or whisk well with a whisk). Set aside.
In a separate medium bowl, whisk together egg and sugar until well combined. Add milk, oil (or melted butter), and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined and moistened. Do not over mix. Mix in chocolate chips or chunks.
For each pancake, drop 1/4 cup of batter onto skillet. Cook 1-2 minutes, until surface of pancakes have some bubbles and the bottom appears to be done. Flip carefully and cook another 1-2 minutes.

2. BREAKFAST MUFFIN

INGRIDIENTS

base:
12 large eggs
2 tablespoons finely chopped onion, (red, white or yellow/brown)
Salt and pepper, to taste

This recipe can be made in three variations

tomato spinach mozarella (for 4 muffins with this topping)
1/4 cup fresh spinach, roughly chopped
8 grape or cherry tomatoes, halved
1/4 cup shredded mozzarella cheese

bacon cheddar: (for 4 muffins with this topping)
1/4 cup cooked bacon, chopped
1/4 cup shredded cheddar cheese

_garlic mushroom pepper:_(for 4 muffins with this topping)
1/4 cup sliced brown mushrooms
1/4 cup red bell pepper, (capsicum), diced
1 tablespoon fresh chopped parsley
1/4 teaspoon garlic powder or 1/3 teaspoon minced garlic

DIRECTIONS

Preheat oven to 350°F | 180°C. Lightly spray a 12-cup capacity muffin tin with nonstick oil spray. In a large bowl, whisk together eggs and onion. Season with salt and pepper, to taste. Add egg mixture halfway up into each tin of a greased muffin tin. Top with the topping of your choice. Bake for 20 minutes.

!!- The topping measurements have been given assuming an assortment of all three types of muffins divided in a 12 mould backing tray. That means 4 muffins of each type. You can after an multiple the topping by 3 if you want a single type.

3. WAFFLES

INGRIDIENTS

1 & 1/2 Cup All purpose flour
6 Tbsp Powdered sugar
1 & 1/2 Tsp Baking powder
1/4 Tsp Baking soda
1/4 Cup melted butter
1 Cup Warm milk
Chocolate Syrup

DIRECTIONS

In a bowl mix flour, sugar, baking powder and baking soda. Give everything a good mix and then, add warm milk to the dry ingredients.
Mix until you get a batter like consistency. Now, add melted butter to it the wet mixture. Keep mixing the batter until it doesn't have lumps.
Use a waffle maker if there or you can even enjoy these as a cross between waffle-pancake. Either way, they taste delicious.

4. DONUTS

INGRIDIENTS

for donuts
1 and 1/2 cups (360 ml) apple cider
1 and 3/4 cups (245 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
pinch of ground cardamom , optional
1/2 teaspoon salt
1 large egg
1/3 cup (65 g) granulated sugar
1/3 cup (65 g) dark or light brown sugar
3 tablespoons (40 g) unsalted butter, melted
1/2 cup (120 ml) buttermilk (or milk)
1 and 1/2 teaspoons pure vanilla extract

toppings

6 tablespoons (85 g) unsalted butter, melted
1 cup (200 g) granulated sugar
2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg , optional

DIRECTIONS

In a small saucepan, bring apple cider to a gentle boil and let simmer over medium heat until thick and reduced to about 1/3 cup (80 ml), 15-25 minutes. Set aside to cool.
Preheat oven to 350°F/180°C
In a large bowl sift together flour, baking powder, baking soda, spices, and salt. Set aside. In a small bowl whisk together the egg, granulated sugar and brown sugar, until well combined. Whisk in the melted butter. Add the reduced apple cider, buttermilk and vanilla extract, and mix until combined. Pour the mixture into the flour mixture and whisk just until combined and smooth.

Bake for about 10 minutes until a toothpick inserted into the center of the donuts comes out clean. Let donuts cool in the pan for 5 minutes and then transfer them to a wire rack.
