Hello muses, happy Tuesday!

Hope you all are doing great and having a wonderful Summer if you're up in the Northern Hemisphere, and a really cozy and nice Winter if like me, you're down in the Southern Hemisphere.

I also hope you are ready for another recipe, because today I want to share with you my great-grandma's vanilla cake recipe. It's really easy and you probably have all the ingredients already, so it's great for beginners!

I can guarantee that once you try this, you won't get back to pre-made cake flour. So without any further ado let's get to it.


  • 1 1/2 cups of self-rising flour. If you want to use normal flour, make sure you add baking powder.
  • 1 cup of sugar.
  • 1/2 cup of milk, room temperature. You can use any vegetarian/vegan milk of your choice, as well.
  • 1/4 cup of vegetable oil.
  • 2 eggs, room temperature. Again, you can replace them with any vegetarian/vegan option.
  • 1 teaspoon of vanilla extract.
  • A pinch of salt.

  • 1- Start by pre-heating your oven at 180° C (350° F). By the time the batter is ready, so will be the oven.
  • 2- In the meanwhile, mix the eggs with the sugar and the vegetable oil until you get a creamy-like texture. Make sure not to over mix the batter or it will curdle.
  • 3- Gradually add in the milk and the flour, alternating between them. Make sure there are no lumps. I like to add them in thirds.
  • 4- Pour your batter in a greased and lined pan and bake it for 45 minutes to an hour.
  • 5- Once it's done, let it cool for 15 minutes and enjoy!

  • You can use any food colorant you want for a fun twist! I used to do that when I was younger and it looked really good.
  • You can add lemon zest with the vanilla extract or just on its own, too. It smells and tastes delicious.
  • Powdered sugar makes for a quick but pretty topping, if you're in a hurry.
  • If you want to get fancier, you can add frosting or whipped cream on top. Sprinkles are another good option, as well.
  • You can eat it plain and simple, or you can layer it and add whatever filling you like.
