Hello! Another vegan blog post for you guys. This time I'm gonna show some recipes and ideas for a 3 day meal plan. I am only gonna put recipes and food I have actually tried (theres one exception and I noted it) and plus ingredients I use.

Day One

Breakfast

Apple Cinnamon Oatmeal

I like to add chia seeds or sunflower seeds on top for extra nutrition. Other combinations for oatmeals I like are peanut butter banana, just cinnamon, and berry oatmeal.

Lunch

Veggie Sandwich (and maybe a protein shake)

Might sound kind of boring and tasteless to have just bread with veggies but I promise, it's all in the bread and the spread. I use Dave's Killer Bread and either hummus, pesto, or homemade guac as my base. For veggies, I do cucumber, tomato, and kale/spinach. You can even find vegan mayo if you would like to try that. If I do strength training that day, I will have an almond banana protein shake on the side

Dinner

Protein Buddha Bowl

There is no specific recipe I recommend for this because you can always mix and match but here is a link of ideas:

If you've never had a buddha bowl you probably think it's an instagram meal that looks better than it tastes (or it's a lot of work) but I promise, it's not. For my base, I'll sometimes add rice but for a lower carb dinner I would add black beans or chickpeas. For veggies, I do roasted carrots, kale, and zucchini. I also add some roasted sweet potatoes on top and then drizzle with a sweet sauce or just a bit of agave and hot sauce. Mix and match and pile that food on!

Day Two

Breakfast

Homemade Zucchini Muffins

If you like zucchini bread, these might change your life. This is one of my favorite vegan recipes ever and I do something called Muffin Saturdays where I make vegan muffins every Saturday and these are the winner in my household. I use a little less sugar than the recipe calls for and it comes out perfect.

Lunch

Protein Kale Salad

Again, I don't have a specific recipe for this but here are ideas:

Those pictures can come to life! Salad isn't just kale or lettuce in a bowl. I personally like kale but some people don't like the bitterness so you can switch out for spring salad mix or spinach. For protein, I add chickpeas, black beans, or a crumbled up bean burger. For veggies, cucumber, tomato, and avocado (one time I added leftover roasted potatoes and it was amazing). For dressing, olive oil with lemon or get fancy and get some tahini or vegan salad dressing. Lastly, I like to add sunflower seeds or crispy onions for crunch. I also season my salads with salt, lemon pepper, and paprika.

Dinner

Vegetable Stir Fry

I've never used this recipe as I usually just work with what I have but it looks great and I would give it a try.

I am a big fan of using leftover veggies so when I have a good amount of half used veggies in my fridge plus some stir fry noodles, I go to this. I use Annie Chun's Hokkein Noodles and veggies like bell peppers, mushrooms, zucchini, onion, and whatever left over veggies would work in the dish. I add some garlic, soy sauce, sesame oil, a lil lemon and then various seasonings that fit a voila!

Day Three

Breakfast

Avocado Toast

I know! So basic! Who actually eats this! Well, I do. If you don't like avocado of course this may not be for you but if you do, give it a try. Don't just smash avocado on bread and eat it because that won't be very flavorful. I smash some avocado in a bowl, season with salt, pepper, garlic and onion powder, paprika, and a little bit of lemon. I toast some bread, spread vegan butter (sometimes), add the avocado and then top with sunflower seeds. It tastes amazing with english toasting bread! I usually would eat 1-2 slices with a side of fruit and a smoothie.

Lunch

Rice and Bean Burrito

This is another one of my favorite leftovers recipes when I have some already made rice and beans. I mix the beans and rice, and add some seasoning if needed. Warm the tortilla on the stove and add a base like homemade guac, hummus or even vegan pesto (yes, it's a thing and it's delicious) I added the bean and rice mixture and add homemade pico de gallo or raw red cabbage for crunch.

Dinner

Orange Tofu

(Btw, the picture on the right includes a teriyaki tofu recipe) To be honest, I don't love the taste or texture of tofu which is why I really only like it crispy or in soups. But thats ok! Making tofu crispy is easy and only requires corn starch. I make this and put it on top of rice or on the side of some roasted vegetables. If you don't think you like tofu because you've had it raw and sad and unseasoned before, I recommend marinating it, trying it baked or fried, seasoning it, and adding some sauce. Treat it like any other protein that you wouldn't eat straight out of the packaging.

Homemade Vegan Biscuits

No, not British biscuits. These are the soft, "buttery" American biscuit. I made these this morning and I think it changed my life. These are extremely easy and quick and came out delicious! A new favorite. Topped with jam or vegan butter and it's basically heaven.

I hope you guys liked that! This is just to give you some ideas if you are considering vegan or just want some ideas. Yes, I actually do eat all of these things and it isn't just a post of random vegan recipes I found and said "Oh looks good" without actually knowing if it's good. So hopefully you guys are willing to try them.
