There are various recipes for mascarpone cream (some don't use eggs or cream) but this is the best one for me.

Yolks 2
Sugar 150gr
Mascarpone 500gr
Fresh cream 250ml
A bit of rum
Savoiardi biscuits

Usually I don't have precise quantities for savoiardi, coffee and cocoa because I decide based on the size of the tiramisù I'm preparing.

Start by preparing the coffee, putting it in a bowl and letting it cool.
1).Break the eggs and separate the yolks from the whites.
Put the yolks in a bowl and put them together with the sugar until a light and fluffy mixture is obtained, add the mascarpone and the rum to the egg and sugar mixture and mix together.
2).In a separate bowl, whip the cream and then add it to the mascarpone and egg mixture, making movements from bottom to top.
Once the cream is ready and the coffee is cooled, take a pan and the ladyfingers.
3).Dip the biscuits one at a time into the coffee and place them in the pan until the bottom is covered, add a layer of cream, make another layer of ladyfingers and another layer of cream.
4).Finally sprinkle the cocoa on top and let it rest in the refrigerator for 5-6 hours.
