The other weekend my sister and I decided to make cookies over video call and to my surprise, my cookies turned out delicious. Safe to say I ate almost all of them myself and right now I wish had more. We found this recipe in a cookbook my sister bought a few years back so I do not get credit for coming up with the recipe. I do, however, give myself credit for successfully executing the recipe and enjoying some amazing cookies. You can also find the recipe online

115gr butter, softened
125 gr caster sugar
125gr soft light brown sugar
2 large eggs
1 tsp vanilla extract
280gr plain flour
1 tsp baking soda
300gr chocolate

Step 1: Preheat your oven at 180 degrees.
Step 2: In a large bowl whisk together the butter and sugar until pale and creamy. Whisk the eggs and vanilla extract into the mixture until smooth. Sift in the floor and baking soda and beat together until well mixed. Add chocolate!
Step 3: Drop 12 large spoonfuls of the mixture on a baking sheet covered with baking paper. Space them well apart (like really well)!
Step 4: Bake in the preheated oven for 15-20 minutes, or until set and golden brown.

The recipe makes 12 cookies but if you make them smaller you can make more. The cookies spread out a lot when they bake in the oven so you might have to use 2 or 3 trays to bake the whole mixture. You can use any chocolate you like but I used dark, milk and white chocolate (mostly because I couldn’t decide on just one kind). It was the first time I tried the cookies this way and they turned out amazing. They taste THE BEST just a few minutes after the come out of the oven and of course, you cannot go wrong with dipping them in milk. They are still good the day after but you will enjoy them the most when they are fresh. The pistachios were obviously not part of the recipe but I think that a type of nut, like almonds or walnuts, taste great with the cookies.
