Ingredients 🍁

1 hokkaido pumpkin
1 tbsp olive oil
50g cashews
350ml water
3 tbsp corn starch
1 tbsp nutritional yeast
1 tsp apple cider vinegar
2 garlic cloves
1 onion
250g spinach
100g marinated artichokes
Salt & pepper
Pumpkin seeds

Method 🍁

Soak the cashews in hot water for 20 minutes. Cut the pumpkin in half, remove seeds and sprinkle with olive oil, salt & pepper. Bake at 200c/350f for 30minutes. In the meantime, heat a little bit of olive oil in a sauce pan. chop the onion and sauté for a few minutes. Blend the cashews, water, nutritional yeast, apple cider vinegar, corn starch and garlic until smooth and add to the sauce pan. bring to a boil, stirring often. Chop the spinach and artichokes and stir into the sauce. Season with salt and pepper. Fill into the pumpkin halves and bake for another 15 minutes, then sprinkle with toasted pumpkin seeds and serve.
