Ingredients for The Maamoul dough
¼ cup milk
¼ teaspoon active dry yeast
2 cups all-purpose flour
1 Tablespoon sugar
2 Teaspoons of canola oil
7 tablespoons of unsalted butter(melted)
½ teaspoon pure vanilla extract
¼ cup water

Method for The Maamoul dough
In one bowl, mix milk and yeast. Set aside for almost 5 minutes. In another bowl, mix flour and sugar. Add oil and melted butter into the flour mix. Add the yeast and milk mixture and vanilla extract. Mix gently with your hand. I haven't used mixer or anything, this is all mixing with hands. Add water, a little at a time, mixing gently after each addition, until the dough is soft. Cover the dough and set aside to rest for at least 20 minutes.

Maamoul Filling method
1/2 cup of Baking Dates (these are finely chopped dried dates, pitted and chopped actually, best for baking and for smoothies, I can post it's pictures and the brand's name too if someone wants to see for reference)
2 teaspoon canola oil
1/2 teaspoon almond extract
¼ teaspoon cinnamon
A pinch of ground cardamom

Maamoul filling method
Combine the baking dates with other ingredients I mentioned for the filling.

For Dusting
1/4 cup of cocoa powder (optional)
Or Powdered sugar.

Now, Preheat your oven to 350F. Take out the dough into 1 Tablespoon sections. Roll each section into a nice ball shape. Place half a tablespoon of the dates filling and cover it with the next ball on top. Then, flatten the cookie slightly, and by using a fork press, decorate or make a design on the top. Place the filled and shaped cookies onto a parchment-lined baking sheet. I bake 10 cookies at one time to give each a plenty of space to get widened and risen. Bake the cookies for about half n hour or when you see they are getting lightly golden brown, crumbly and a slight crunchy. #hubaakbar

Maamoul cookies will last for 2-3 weeks in an air-tight container on the counter. I usually put them in the fridge. They will last even longer if kept in the fridge.
