↬ Ingredients

⁃ 3 cups cooked quinoa
⁃ 1 large cucumber
⁃ 10-12 cherry tomatoes
⁃ 1 large red onion
⁃ 1 can chickpeas
⁃ ½ can black beans
⁃ ½ can white beans
⁃ juice of ½ lemon
⁃ handful of fresh basil leaves, chopped
⁃ handful of fresh baby spinach leaves, chopped
⁃ 1 tbsp extra-virgin olive oil
⁃ sea salt and black pepper to taste

↬ Instructions

⁃ Finely chop the cucumber, onion and tomatoes and place together with the cooked quinoa into a large salad bowl.

⁃ Place chickpeas, black beans and white beans in a colander, and rinse under fresh running water. Drain well and add them into the salad bowl.

⁃ Add in lemon juice, basil and spinach leaves, and season with olive oil, salt & pepper to taste. Mix all the ingredients until combined.

⁃ Serve immediately, or cover with cling film and refrigerate until ready to serve.
