2 Go To Deserts

So I've recently started baking a ton lately and I've decided to share with youse my go 2 deserts. One is more complicated than the other but give it a try because it's honestly easier than the instructions show.


Oreo Truffles

Difficulty: easy
Ingredients:

2 packets of oreos (28 oreos in total)
250g cream cheese
340g white chocolate, melted

Step 1 - In a plastic bag crush the oreos (do a few at a time).

Step 2 - In a large bowl, combine oreo crumbs and the cream cheese, stirring with a spatula until evenly mixed.

Step 3 - Chill the mixture for an hour.

Step 4 - Roll the mixture into balls (no larger than ping pong balls).

Step 5 - Dip the truffles into melted white chocolate and place on a baking tray with baking paper.

Step 6 - If you're feeling extra whilst the chocolate is still melted sprinkle some crumbs on top before the chocolate sets.

Step 7 - Repeat with all the truffles and reheat the chocolate when necessary.

Neapolitan Ice Cream Chocolate Cake Roll

Difficulty: easy - medium
Ingredients:

6 eggs
1 cup sugar
1/2 cup all purpose flour
1/2 cup cocoa powder
1/4 teaspoon salt
2 teaspoons baking powder
2 tablespoons oil
2 teaspoons vanilla extract
Neapolitan ice-cream or vanilla, chocolate and strawberry ice-cream

Step 1 - Preheat the oven to 180c and line a baking tray with baking paper.

Step 2 - In a large bowl whisk the eggs for 2 minutes or until pale.

Step 3 - Add the sugar, vanilla and oil. Whisk again until combined.

Step 4 - Add the flour, cocoa powder, salt and baking powder. Mixed with a spatula until combined.

Step 5 - Pour the batter into the tray with the baking sheet. Bake for 12 minutes.

Step 6 - Lay out kitchen towel and sprinkle it with cocoa powder.

Step 7 - When the cake is done, flip it onto the towel and remove the paper and roll the towel with the cake into a log.

Step 8 - Refrigerate for 1 hour.

Step 9 - Unroll the cake and place the ice-cream evenly starting with chocolate, strawberry and vanilla and not letting them mix.

Step 10 - Smooth the ice cream out.

Step 11 - Tightly roll the cake back up but without the towel.

Step 12 - Freeze the cake for 3 hours or overnight.
