here is a great recipe for those us, who love some nice white-choc cupcakes, but don't wanna hurt any animal. Enjoy. <3

✧ Cupcake mixture:

1 cup all-purpose flour, sifted
2 teaspoons baking powder
pinch salt
½ cup vegan white sugar
1/4 cup plain-flavoured oil
¾ cup Soy Milky Lite
1 teaspoon vanilla extract
½ tablespoon apple cider vinegar
100g vegan white chocolate, melted

❅ White-choc Icing:

100g vegan margarine
100g vegan white chocolate, melted
200g icing sugar (confectioners sugar)

✧ The mixture

• Preheat oven to 180 degrees Celsius (365 °F) and line 10 cupcake pans with liners or spray oil.
• In a large bowl, add the flour, baking powder, salt and sugar. Stir until combined.
• Add in the oil, soymilk, vanilla, apple cider vinegar and melted white chocolate. Beat for a couple of minutes or so until smooth without lumps.
• Divide the mixture between the 10 cupcake pans.
• Bake for 25 to 30 minutes or so until risen and the tops of the cupcakes bounce back when touched.
• Take out of the oven and allow to cool completely.
• Set aside.

❅ The Icing

• In a bowl, add the margarine and icing sugar. Feel free to add some food coloring.
• Beat for 30 seconds or so until combined.
• Pour in the melted white chocolate and beat until creamy and fluffy.

✧ Decorate

Pipe the Icing onto the cupcakes and decorate them if you want - add sprinkles, strawberries or raspberries. 🍓

Serve immediately or store for up to three days. Enjoy. <3
