My name is Victoria and I'm on a plant-based diet :)

A lot of people think that it's really hard to eat plantbased and that all you eat is a salad or a carrot and that everything tastes bad. This couldn't be farther from the truth. Eating plantbased food gives me more energy and happiness!

Anyways... today I'll be showing y'all some healthy breakfast ideas. Let's get started :)

PLANTBASED YOGHURT WITH TOPPINGS
This is one of my favourite and easiest breakfast idea. In the morning I just grab some plantbased coconut/vanilla yogurt (from Alpro) and put it in a bowl. For toppings, I add some frozen fruit (mango with pineapple or strawberries and blueberries), almonds and chia seeds. I eat this with some black coffee or a cup of tea.

VEGAN PANCAKES
Who doesn't love pancakes? I do!
Ingredients:
-1 1/2 whole grain spelled flour'
-2 tsp baking powder
-1/4 teaspoon salt
-1 1/2 unsweetened soy milk (you can use almond milk but I don't like that)
-2 tbsp coconut oil
-1 tbsp Stevia
-1 tsp vanilla extract

For toppings use agave syrup, peanut butter, and berries. Or strawberries, bananas and agave syrup.

OATMEAL
-1/2 cup of oatmeal
-1/4 cup of soy milk (or another plantbased milk)
-1 tbsp agave syrup

Top with blueberries, bananas, and peanut butter.

CHIA PUDDING
Ingredients:
-1/2 cup chia seeds
-1 1/2 cup soy milk (or another plantbased milk)
-tsp agave syrup
-tsp vanilla extract
-tsp cinnamon
-1/4 cup frozen berries

Put it in an empty jar, let it sit in the fridge overnight and eat it in the morning. Quick and easy. I like to drink some orange juice with it.
