One great way to fill your notebooks/ journals is writing down your goals and dreams that you have in life. For example; bucket lists, books you want to read, goals (long term, short term), anything that you feel passionate about. Just by writing down what you want to achieve you are more likely to do it.

Writing down the little things that you are thankful for every day is another way to fill up any empty space. Whatever it may be having a book filled with things that you are grateful for is a great constant reminder of what truly matters.

Documenting your favourite memories is probably my favourite way to fill up any spare space. Include pictures, quotes, plane tickets anything that is significant to your story. This is a great way to reminisce all the great times that you have had. "Good things come and go but the memories last forever".
