Hi everyone,

I've decided to share with you my cheesecake recipe. The very first time I made this was when I was 14 in food class. It didn't exactly turn out very well but since then nearly 7 years later I have almost perfected it.

  • 1 packet malt biscuits
  • 125g of butter, melted
  • 1/2 cup of lemon curd
  • 250g cream cheese
  • 1/2 cup of cream
  • 1/4 cup of sugar
  • 4tbsp of boiling water
  • Gelatine. I'm not exactly sure how much you'll need. Ours comes in little sachets so I usually use one of them which I think is a tbsp.


1) Grease and line a round cake tin. Set aside.
2) Weigh out the butter, cut it up and place in either a microwave or in a pan on low heat to melt.
3) Crush the biscuits. You can do these multiple ways. In a food processor is probably the easiest. We don't have one of those so I just put them a few at a time in a mortar bowl and crush them that way or you can put them in a plastic bag and crush them using a rolling pin. It's up to you.
4) Add the butter to the crushed biscuits and mix until the biscuits are no longer dry. Press into the cake tin. To get it even press the mixture flat with the base of a cup.
5) Beat together the cream cheese, sugar, and lemon curd.
6) In a small bowl put in the gelatine and add the water to dissolve. Leave for 2-3 minutes.
7) Beat the gelatine into the creamed mixture.
8) Beat the cream in a separate bowl and then fold into the cream cheese mixture.
9) Pour the mixture into the cake tin as evenly as you can.
10) Cover with glad wrap or tinfoil or whatever you have. Make sure it's covered properly. Let it set in the fridge for 3-5 hours or overnight.
