Hi guys,

Thats my absolutely fav burger recipe with sweet potato fries and a spicy ketchup dip! *-*

vegan pulled pork burgers with black beans patties

Patties:

1 c cooked quinoa
1/2 c cooked lentils
1 1/2 c black beans (rinsed and drained)
1 tsp cumin
1 tsp paprika
1 tsp salt
2 tbsp tomato puree
2 clove of garlic
1/4 c + 2 tbsp breadcrumbs
2-3 tbsp olive oil for browning patties

Process black beans and garlic in a food processor.
Transfer the mixture into a large bowl, add all the ingredients and stir to combine. If the texture is too mushy add more bread crumbs until you obtain the desired consistency. Shape mixture into patties. Heat a skillet over medium high and cook the patties both side until golden brown.

Vegan pulled pork:

500g king oyster mushrooms

Cook mushrooms in a preheated oven until darkened. When mushrooms are done cooking, allow them to cool slightly, then shred with a fork.

Bbq sauce:

2 tsp smoked paprika
4 tbsp soy sauce
2 tbsp tomato puree
3 cloves garlic
3 tbsp apple cider vinegar
1 tbsp maple syrup
2 tbsp olive oil
4 tbsp water
pinch of salt and pepper

Combine all ingredients and mix well.

Simple mustard sauce:

3 tbsp yellow mustard
4 tbsp maple syrup
pinch curry powder

Baked sweet potato fries with spicy ketchup

Baked sweet potato fries

4 medium sweet potatoes
3 tbsp olive oil
3/4 tsp salt + more salt for sprinkling over baked fries
1/2 tsp fresh ground black pepper

Heat oven to 450°F. Line two baking sheets with aluminum foil then slide into the oven so they become hot.
Scrub then cut the sweet potatoes into 1/2 inch sticks. Add to a large bowl and toss with olive oil, salt, and pepper. Tumble sweet potatoes onto hot baking sheets and spread into one layer. Try not to crowd them too much or else they will not brown.
Bake fries, turning once and rotating pans once, until edges are lightly browned and centers are tender; 15 to 25 minutes. The fries are done when the surface looks dry and the fries have puffed up a little. Don’t fret if the edges become brown, they will taste more caramelized than burnt. Serve fries with a sprinkle of extra salt on top.

Spicy ketchup

1/4 c ketchup
1/8 tsp garlic powder
1/8 tsp onion powder
1/4 tsp paprika
1/8 tsp chili powder
1 tsp hot sauce
1/2 tsp Sriracha

Add all ingredients to a small saucepan. Bring to a light simmer and cook for 5 minutes.
