Wow it's been a while since I've written anything (oops, I'm really sorry, I've been out of inspiration and I'd prefer not to copy anyone).

Anyway, moving on from that, one of my favorite fall activities is baking. So when I got up this morning and had the urge to bake something, I immediately headed to my kitchen.

Personally, I don't really like banana, but I'd never baked it into anything so I figured hey, why not.

2 mashed bananas (ripe)
1 tsp vanilla extract
1/2 cup butter
1/4 cup white sugar
1 cup brown sugar
2 cups flour
1 tbsp corn starch
1 tsp baking powder
1 tsp baking soda
2 cups chocolate chips


  • Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius)
  • Mix butter and sugar until creamed, then add the mashed banana and vanilla
  • In a separate bowl, mix together the flour, corn starch, baking powder, and baking soda
  • Add dry ingredients to the wet ingredients, and mix together
  • Fold chocolate chips in
  • Scoop dough out, and place on a baking sheet lined with parchment paper
  • Bake 9-10 minutes, or until golden brown

I'm not your mom so I'm not gonna tell you how big to make the cookies, that's up to you. I just used a spoon to scoop out medium sized chunks, and I had 12 cookies per sheet.

You're probably wondering, why the heck aren't there eggs in this recipe. Well, usually the eggs are a binding ingredient but in this case the bananas are used to do that, as well as the corn starch.

I'm vegan, so I didn't get to taste them, but my dad and brother seemed to like them and they ate quite a few, so my verdict is that they're probably delicious.
