Cookie Cake:

Ingredients

Instructions

Heat the oven to 190 ยฐ C and grease a baking tray with butter. Mix the flour, baking soda, and salt in a medium bowl. Beat butter, white sugar, and brown sugar in a bowl until creamy and fluffy - it will take about 3 to 5 minutes. Add the eggs and vanilla to the mixture and beat until smooth. Add the flour mixture until well blended. Put the chocolate nuggets and mix well. Grease the dough in the pan and bake for about 20 to 25 minutes or until golden brown. Instructions

Preheat the oven to 165 ยฐ C (325 ยฐ F) and grease a baking tray with butter (just cover with oven paper). In a medium bowl, combine the flour, salt, and baking soda. In another large bowl combine the melted butter and sugars until they are creamy. Add the egg, yolk, and vanilla to the large bowl and beat well until well beaten. Sieve the dry ingredients mixture over the large bowl, and mix until the dough is well homologous. Finally, add the chocolate pieces until they are incorporated evenly. We make small balls (with the amount of mass that fills a tablespoon), leaving a space of at least three fingers between each cookie.

๐Ÿ 2.5 ml (1/2 teaspoon) of vanilla essence

๐Ÿ 5 ml (1 teaspoon) of baking soda
๐Ÿ 1 ml (1/4 teaspoon) of salt
๐Ÿ 75 g (1/3 cup) chocolate nuggets (or chopped black chocolate)

Instructions

Preheat oven to 180 ยฐ C (350 ยฐ F) In a large bowl, beat the butter with an electric hand mixer (or KitchenAid) at an average speed for one minute. Add sugars and beat 3 more minutes at high speed. Now, with the mixer set at a slow speed, add the egg and vanilla. Add the Nutella and mix until well blended. In another small bowl, sift flour, salt, and baking soda. Slowly add the dry ingredients to the dough in the large bowl. Beat at a slow speed until all is mixed. Add the mixture to the boil, stirring until it is homogeneous. To beat and incorporate the chocolate with a spoon. With a teaspoon, make balls with the dough. Put a baking paper in a tray and place the little balls on top of each other a little apart (they will expand a bit with the heat). Put them in the oven for about 6-7 minutes. ๐Ÿ 80g (1/3 cup) butter, or shortening
๐Ÿ240mL (1 cup) milk

Preheat the oven to 220ยบC. Grease the oven tray. Add the flour, yeast, salt and sugar in a bowl and mix. Cut the butter into pieces that look like crumbs. Add half the milk and mix, and then add the remaining milk. Put the dough on the surface with flour, and knead gently 15-20 times. Spread the dough and fold it in half. ๐Ÿ 150 g very ripe plantains, crushed between 2 and 3 bananas
๐Ÿ 120mL (1/2 cup) sour cream
๐Ÿ 1 teaspoon vanilla
๐Ÿ 75 g (1/2 cup) of chocolate chips

Instructions

Preheat the oven to 180 ยฐ C (350 ยฐ F) In a medium bowl, combine flour, chocolate powder, salt, and baking soda. We mix the ingredients well and set them aside.
In another bowl, beat the sugar and butter about 2 or 3 minutes until creamy. Add an egg and mix. Add the other egg and beat well. Then we put the ingredients dry and beat. Finally, add the crushed bananas, the sour cream, the vanilla and the chocolate nuggets until everything is well mixed. We put the dough in a cake mold already covered in butter. Bake it for an hour (put a toothpick in the center of the cake and if it comes out clean or with some crumbs, it is done).
We let it cool for about 10 minutes.

Pumpkin pancakes:

Ingredients

Instructions

Combine flour, sugar, baking powder, salt and spices in a large bowl. Mix well with a fork. In another small bowl, mix the milk, pumpkin puree, egg and oil until all is combined. Add the wet ingredients to the dry ones, and combine everything well, mixing until everything is combined (we do not want to mix it too much!)
Heat a large skillet and melt a little butter to cover the pan. When the butter is hot (but do not burn it!), Add ยผ cup to the pan. Depending on the size of the pan, we could make 2 or 3 pancakes at a time. When there are bubbles above each pancake, we turn them around. Cook each side until golden brown.
We serve the pumpkin pancakes with maple syrup, glacรฉ sugar, nutella or whipped cream.
