Hey Hearters!

This is my version of creating a delicious and healthy massaged kale salad. I especially love to make this during the summertime because it's light and comforting to consume in hot weather climates. This is a vegan-friendly recipe too! Sorry I don't have any precise measurements to provide, but feel free to customize this recipe to fit your taste buds and serving sizes.

Ingredients:

Kale
Lemon Juice
Sea Salt
Extra Virgin Olive Oil (EVOO)
Thinly Sliced Red Onions
Chopped Carrots (little rectangular pieces)
Diced Yellow & Orange Peppers
Diced Granny Smith Apples
Freshly Ground Black Peppercorn
Dried Cranberries
Sunflower Seeds

Dressing:

Raw Honey
Lemon Juice
Apple Cider Vinegar

Instructions:

1. Wash and dry the kale. Remove the ribs with a knife and cut the kale leaves into bite-size pieces.
2. In a large bowl, add the kale. Sprinkle in some sea salt (enough to get all the water out of the kale). Massage with your hands for a few minutes until the kale is tender and reduced in volume. Pour out any leftover liquid from the bottom of the bowl. Add in some lemon juice/half a lemon + olive oil, and toss to combine.
3. Add your favorite veggies and toss again. Mine are listed above.
4. Sprinkle a little bit of freshly ground black peppercorn to taste. Top it off with a handful or two of dried cranberries and sunflower seeds, for some sweetness and extra crunch.
5. For the dressing, mix a bit of raw honey, lemon juice, and/or apple cider vinegar together. If you're planning on serving this later, I highly recommend not mixing in the dressing and pouring it on when you decide to serve it.
