As you probably know if you have already read my other two recipes, I am currently on a diet, so I have to avoid some types of food. Fortunately rice is not among them. The key to include it in diets is to eat it with the RIGHT ingredients and in this case it is all about VEGGIES, like sweet corn, tomatoes or cherry tomatoes, carrots, green peas, celery, cucumbers or peppers. You can choose one ingredient or even mix them all!

Today I am going to propose an alternative recipe called Jaboulé, which consists in a Lebanese bulgur based salad. It is very refreshing and for this reason I particularly enjoy eating it during the Summer.

Ingredients: (for 4 people)
- 280 g bulgur (if you have not got it at home or you do not know where to find it you can also use regular rice, barley, quinoa or spelt)
- parsley
- mint
- 1 cucumber
- 4 spring onions (as an alternative you can also use 1 onion, or you can totally skip this if you do not like it)
- 2 tomatoes
- juice of two lemons
- 2 tbsp olive oil
- salt
- pepper

1) Cook bulgur in 1/2 liter of water for 10 minutes and then leave to cool for about 20 minutes. Rice, barley and spelt usually require more time than this.

2) In the meanwhile wash and dry your parsley and mint and then chop them up. Then peel your cucumber, wash the spring onions and dice both of them. The smallest the better!

3) Do the same thing with tomatoes, but remember to throw away the stalk.

4) Now separate your bulgur with a fork, place it in a bowl and mix it with the veggies and the aromatic herbs.

5) Add olive oil, lemon juice, salt and pepper and leave to rest in the fridge for about an hour. In this way the bulgur will absorb all scents and be super yummy.
