This is one of my favourite recipes: it is yummy, healthy, quick and easy to prepare and for this reason, ideal for everybody and especially for all fish lovers (like me).

As I live in a coastal area, salmon is quite cheap and easy to find during pretty much every time of the year even in the smallest supermarkets or at the local farmers market. Indeed this recipe is perfect for every time of the year!

This is my hometown: Cesenatico. It is a seaside resort located in the North-East of Italy, 100 km far from Bologna and nearby Rimini (about 15 km).

Ingredients:
- salmon fillet (raw, both fresh and frozen are fine)
- some rocket
- 1 cucumber
- 1 red pepper
- 1 tomato
- 30 g of bread (I am currently on a diet so I have to stick to this quantity, but obviously you do not have to)
- coconut oil (always because of my diet, but you can use olive, sunflower or avocado oil if you prefer)
- salt
- black pepper
- lemon juice
- sesame seeds
- fesh parsley

1) First preheat the oven to 200°C. Grease a baking tray with your oil of choice (salmon tend to stick quite easily), and once the oven is hot enough (usually after 10/15 minutes), place the fillet on the tray and season it with salt and pepper at your own taste. Cook in the oven for about 10 minutes.

2) In the meanwhile you want to prepare your side salad by washing all your veggies and then cutting them, and your toasted bread by dicing it and toasting it in a frying pan with a bit of oil until golden brown. Create a bed of rocket and then place the other veggies and the diced toasted bread on it.

3) After 10 minutes you want to check your salmon and turn it over, in order to cook well both sides. If you want you can also season the still uncooked side; then cook it for further 10 minutes.

4) After 10 minutes check the cooking of your salmon: it should look soft and pink and not orange as it looks when still raw (to be sure prick it with a fork and see how it looks on the inside). If you are satisfied with its aspect and cooking, season your veggies with oil and salt and then place the salmon on top of them.

5) To complete your dish squeeze a slice of lemon on your salmon and season with parsley (this will give it a nice and fresh flavour) and sprinkle all your dish with sesame seeds (optional).

6) Enjoy!
