This Healthy Chicken Caprese recipe is a great dish. It can be enjoyed warm or cold, and is actually a great salad topper, too!


1/2 cup balsamic vinegar to garnish
8oz raw boneless, skinless chicken breasts
1 tsp coconut oil
salt & pepper to taste
fresh mozzarella cut into 1/4 inch slices
1-2 tomatoes sliced
¾ cup fresh basil, chopped


Slice chicken breast into thin slices — it should make about 4-5 pieces. Season with salt and pepper. Heat 1 tsp coconut oil in a skillet on medium heat. Place chicken breast slices on a skillet and cook each side about 6 minutes or until cooked all the way through. In a separate pot, bring 1/2 cup balsamic vinegar to a boil then let simmer for about 10 minutes to reduce. After, remove from heat and let sit to create a thick balsamic glaze. Slice tomatoes, cheese, and basil. Place cooked chicken onto a serving plate and top each piece with a tomato slice, mozzarella slice then basil. Garnish with balsamic glaze.
